[vegan] Healthier "Snickers®" Bombs

Holy Cannoli! I can not wait to share this super easy yet delectable and satisfying recipe with you all today! So, to start - I have never really been one to eat a lot of candy, I always reach for salty snacks. But, every once in awhile I do crave something sweet and this recipe is so simple to make that it is great for a quick “grab and go” snack. Plus, they really taste like Snickers!

What are Medjool Dates?
Medjool Dates are a fruit of the date palm. Date palm trees originated from the deserts of the Middle East, and once ripe, the dates from these trees form a super sweet and sticky fruit. Date palms have been brought to the US and are grown in many different areas including California and Florida. However, in places like Florida (where we are) the dates only ripen during rainy season, which usually means they rot before they are harvestable. In places like California, these dates have a dryer fruiting season and are able to be harvested and consumed! Medjool dates are typically used in vegan recipes to substitute sugar and caramel-like ingredients. They are a more natural way to sweeten recipes, and since they are so super sweet you don’t need a lot of them in order to obtain the amount of sweetness you like. In two dates, there are roughly 133 cal, 32 g of sugar and 0 g of fat. However, due to the high amount of sugar, it is recommended that they are consumed in moderation. That’s what makes these Healthier Snickers Bombs such a great snack! You really only need to munch on one or two because they are rich and incredibly sweet.

Vegan Chocolate: What to Look Out For?
There are a lot of misconceptions about chocolate when it comes to veganism. Most people think that they cannot enjoy chocolate anymore, but in reality there are so many options! Naturally, chocolate comes from the cacao bean - which is obviously 100% vegan, however the process of preparing chocolate in the way we know it today, is usually not vegan. This process usually involves adding things like milk, milk powder, and butter to obtain a sweet milky chocolate flavor. The good news is, there are plenty of vegan chocolate brands that do not process in this way. One of my favorites, is ”Enjoy Life”, they have a lot of different chocolate products including dark, semi-sweet, and chocolate containing treats. For this recipe, I found vegan chocolate chips at my local Aldi, and it just so happens that they are dark chocolate chunks - but feel free to use any type of chocolate you like! I prefer to use dark chocolate in this recipe because the sweetness from the peanut butter and the dates really bring out the natural flavors from the dark chocolate, I feel as though if you use semi-sweet chocolate it might be too sweet ... but I will totally leave that up to you! 😉


[vegan] Healthier Snickers® Bombs

Ingredients:
10 Medjool Dates
1/4 C. Peanut butter (or any nut/seed butter)
1/3 C. of Roasted/salted peanuts
1/2 C. Vegan chocolate chips (I use dark chocolate)
1 tsp. Coconut oil
Sea salt
Procedures:
Cut a slit down the center of your dates, making sure it’s just enough to remove the pit, do not cut all the way through the dates.
Remove the pit and discard (or rinse and save them to make date coffee!).
Place your chocolate chips in a microwave-safe dish and place your coconut oil on top. Microwave for 30 seconds and stir until smooth (if needed, microwave in additional 10 second intervals until completely melted and silky smooth).
With a spoon, fill dates with peanut butter. Press a few peanuts into the peanut butter and close shut.
Places dates on a freezer-friendly dish and spoon the chocolate overtop of the dates, covering completely.
Top of with a sprinkle of flakey sea salt (if you don’t have flakey sea salt, you can use whatever salt you have just use a very tiny bit).
Place in freezer to set (I wait at least an hour). Take out and enjoy! I keep mine stored in the freezer, they hold together better and this also gives them an amazing chewy, caramel-like consistency!
