[vegan] Biscoff Chocolate Mousse Pie

Happy National "Pi" day, Collective! We are sharing a scrumptious and decadent recipe with you today. Since today is 03.14 we wanted to give you a fun "pi" recipe to impress both your vegan and non-vegan friends and family!
This pie is rich, creamy and yummy! The crust is made out Biscoff cookies and the filling is a vegan chocolate mousse (made with Silken tofu ... trust me you wouldn't even know)!
The Crust
The crust is super easy to make! You want to measure out a half cup (give or take) of vegan butter and melt the butter down. You'll process this with Biscoff cookies and blend until crumbly. This mixture is then super easy to form into a pie crust! If you are using a glass baking dish - I recommend lightly going over the dish with butter to help the pie not stick (it shouldn't anyway because of the amount of butter in the crust, but you can never be too careful). If you are using an aluminum dish, you should be able to skip this step. While you are making the filling you'll want to refrigerate the crust to cool the butter and help the crust congeal together.

The Filling
The filling is a combination of silken tofu, chocolate and agave. My tip here is to make sure you bring the tofu to room temperature and allow the chocolate to cool after melting so you get a super smooth filling. If you skip these steps, your filling will be chunky and have specks of chocolate as opposed to a uniform consistency (you don't want that). Now, if you want a really rich pie, you can use vegan dark chocolate chips - and agave to your liking (I use 1-2 tablespoons). If you want more of a "pudding" like pie, I recommend using semi-sweet chips (like Enjoy Life), and agave to your liking. I have made both pies and definitely prefer the semi-sweet chips, but that is up to your tastebuds!
The Whip
For the toppings you'll want to have vegan cool whip or whipped cream. For a "traditional" chocolate pudding/mousse pie, I'd use vegan cool whip (make sure to allow it to chill in the fridge, not right out of the freezer, so it is spreadable. If you like vegan whipped cream, you can decorate the entire top with dollops of it right out of the can. Then, top the pie with chocolate shavings and maybe a few Biscoff cookie crumbs!

Does it Taste Like Tofu?
No way! You'll never know this pie is made from tofu (and I don't like tofu). However, if you do not allow the tofu and chocolate to come to room temperature before combining - you may taste a hint of it. I also tasted a "hint" of it when I made a dark chocolate mousse pie (with the dark chocolate chunks and not semi-sweet). I recommend using semi-sweet and roughly 2 tablespoons of agave and you won't even know!
