[vegan] Scrap Salsa Picante (spicy puréed salsa)

Do you ever buy more produce than you should? Like, when you went grocery shopping, all produce was 20% off and you went a little overboard (easy to do in general, but being vegan - this happens to me all the time). It's definitely not something I'm proud of, because about 17% of global food production will go wasted, and 61% of that waste comes from households (1). So, I try to make use of my produce while it's on its last leg. Today, I made use of a few tomatoes, onion and jalapeño - that most people probably would've tossed by now and made it into this healthy snack!

First, I just want to say - this recipe is something I made on my own, it is not in any way, shape or form meant to be "authentic" picante sauce like the Pace corporation or like true Mexican cuisine like Salsa taquera. I simply wanted to make a veggie packed healthy snack with my "near-death" produce .... so don't come for me!

I call this salsa "Picante" not only because it packs a punch with the jalapeño, but it also not like your standard salsa that has nice big chinks of tomatoes. Instead, it is puréed into a very runny sauce. This allows it to be easily used on tacos, burritos and still function as a delicious dipping salsa. All the ingredients are combined well, and other ingredients can easily be incorporated to give this sauce an upgrade. If you want to try something a little different, try adding in some spices or maybe jarred chipotle peppers for a deeper more flavorful sauce.


[vegan] Scrap Salsa Picante (spicy puréed salsa)

Ingredients (approx):
3 1/2 tomatoes on the vine
1 small jalapeño
4 oz onion (1/4-1/2 onion depending on size)
1/4 cup cilantro
2 tsp garlic (2-3 cloves)
Squeeze Lime
Procedures:
Add all ingredients into a blender or food processor.
Blend well, and store in an airtight mason jar. Chill in refrigerator for a few hours to set.
